Pumpkin Goodness and Park Time Fun

Ah here we are, a cornucopia of pumpkin goodness!  Four wondrous and delicious recipes all done with pumpkin puree.  I got the most amazing recipe for pumpkin cornbread from LeAnna at Thoughts and Whatnots, though it isn't her recipe she posted the link on her site and she totally recommends it!  And after baking it (twice now) I have to agree!  So supper yummy!




 

Next on the list is my Super Fantastic Muffin recipe, but with pumpkin puree and pumpkin spice added! Oh so good!  Now the only thing I would have done differently would be to add some chopped apple to the mix but sadly I did not have any on hand... still rather enjoyable!



These little beauties I found on the Internet, the recipe that is.  I knew they were the cookies for me when I read the reviews and they said - "These are amazing with coffee!"   So I baked up a batch and well; they did not last long! 





These cute things were not only lovely to look at but most delicious to devour!  They are basically a white cake mix with pumpkin puree added in.  The beauty of it is that you cannot taste the pumpkin and so all the kids at the party I took these too gobbled them up without a second thought to the vegetable they were consuming... mwahahah! ;)   I got the recipe from the book Deceptively Delicious, it's a good one and I keep trying new things from it.  The book is all about sneaking vegetables into the most unlikely places, like her chocolate chip cookies with chickpeas, no seriously, and they are pretty fabulous too!


So that's my bit, so far, of pumpkin inspired recipes.  I'm trying to not fall into the whole pumpkin pie thing - don't get me wrong, I LOVE pie but I wanted to see what else I could do with pumpkin puree.  I have in my folder yet to try; pumpkin risotto, pumpkin gingerbread cake and I'm thinking pumpkin soup...but we shall see.  I posted these for all my Canadian readers to enjoy over our Thanksgiving weekend...and maybe I'll post others come time for the American Thanksgiving. 


And to finish this all off with I will share with you all how we work off all these pumpkin goodies - with many a trips to the park!
